Oyster lessons 101

Let us guide you through the different oysters we serve on our oyster platter. Here is the flavor difference between the varieties:

Fine de Claire Juizette la Rêveuse NO.3

Origin: Normandy, France

Flavor: A bold oyster with a fresh, briny taste. Thanks to the refinement in the “claires,” these oysters develop a more powerful, slightly sweet flavor. Perfect for beginners.

Irish Rock Oyster NO.3

Origin: Ireland

Flavor: This oyster has an excellent meat content, and the balance between tender and sweet is characteristic of the Irish Rock Oyster selection. For those who enjoy sweet oysters, this is an excellent choice. The flavor can be enhanced with homemade vinaigrette or a squeeze of lemon.

Spécial Poget NO.3

Origin: Charente-Maritime, France

Flavor: Rich in taste. Fresh and briny, with a sweet aftertaste. This oyster has a regular shape, a white compact shell, firm meat, and a crispy, rich, and generous texture. It offers the perfect balance between iodine-rich and sweet, with a refined lingering finish.

Gillardeau NO.4

Origin: Marennes-Oléron, France

Flavor: Exceptionally smooth and harmonious, yet fresh and sweet (the crème de la crème). It boasts a unique, chewy, and crisp texture, with a hint of sea breeze and a soft nutty taste. Plus, a surprising cucumber aftertaste!
